Bread pudding

Ingredients
  • Large White Loaf
  • 4oz shredded suet
  • 4oz soft brown sugar
  • 1 tablespoon black treacle
  • 6oz cleaned currents
  • 6oz cleaned sultanas
  • 4oz cleaned raisins
  • 2oz mixed chopped peal
  • Pinch salt
  • 2 heaped teaspoons mixed spice
  • 2 large eggs, beaten

Process

  • Oven to 375 deg F (Gas mark 5)
  • Line 9 inch square tin with greaseproof paper
  • Tear bread into small pieces (including crust)
  • Soak bread in water for an hour.
  • Drain water - squeeze out as much as possible
  • Add suet, sugar, treacle, currents, sultanas, raisins, peel, salt, mixed spice and eggs.
  • Mix well
  • Turn mixture into tin
  • Cook in preheated oven for 1 hour 15 minutes (Aga cooking time could be much less, say 1 hour)
  • Cut into squares
  • Serve with sugar, custard, cream, evaporated milk, or just eat by itself.
